Sweet Weekend Treat

Most people use the weekend as a time to relax, take some time off and generally also to treat themselves to something a bit decadent. Here's a recipe for all my fellow sweet tooth's!

Gluten Free Chocolate Brownies

Ingredients:

130g unsalted, organic butter, chopped

130g dark chocolate (ideally organic and over 85% cocoa solids)

2/3 cup brown sugar (palm sugar or agave nectar could be substituted)

2 eggs lightly beaten

2/3 teaspoon vanilla extract

1/2 cup gluten free plain flour (almond meal would also work)

2 teaspoons cocoa powder (raw cacao powder for a superfood hit!)

Method:

1. Preheat oven to 160 degrees Celsius. Line a small square cake pan with non-stick baking paper.

2. Heat butter, chocolate and sugar in a microwave for 20 seconds at a time, stirring between, until melted and smooth.

3. Add egg and vanilla to chocolate mixture (make sure chocolate is cool so you don't end up with scrambled eggs!). Mix well. Sift flour and cocoa over chocolate mixture. Stir to combine.

4. Pour brownie mixture into pan. Bake for 15 minutes or until just set. Set aside to cool or put in refrigerator. Once cooled, lift out. Cut into pieces. Serve.

It's certainly not the healthiest recipe ever, but for an occasional gluten free treat it's delicious! Happy baking and happy weekends :)
