Cinnamon Roasted Nuts

I love cinnamon! I seriously love it and put it on everything from my gluten free muesli, to my smoothies and my desserts. Cinnamon can be a therapeutic spices, as it is particularly good for controlling and managing blood sugar issues such as insulin resistance and diabetes. I also find sugar is a great replacement for sugar, on porridge for example. The inspiration for this quick snack came from a Melbourne market where I found a stall selling cinnamon almonds, except they were sugared as well as covered in cinnamon, delicious but not healthy! You are probably aware of all the health benefits of consuming nuts, as they are full of vitamins, minerals and good, healthy fats that are essential in a balanced diet. So here is my quick, healthy recipe for a yummy cinnamon snack:

Cinnamon Roasted Nuts

Almonds

Cashews (or any other nuts you prefer)

Cinnamon (powder, not sticks)

1. Line a baking tray with baking paper. Place the nuts on top and sprinkle a generous amount of cinnamon over all of the nuts. Gently mix the nuts to cover them in cinnamon. In a low oven let the nuts roast for about half an hour, til crunchy. OR

2. Put nuts in a frypan with a bit of coconut oil/butter or almond oil. Sprinkle with cinnamon and roast over low heat until nuts are browning and are coated with cinnamon.

Place in a small bowl and enjoy :)
