Clean Banana Pancakes (two recipes)
Sometimes I swear that eating clean, gluten and sugar free is a million times better than normal food... In fact, I know it is! When you discover simple, healthy recipes that are also amazingly delicious, life is just perfect. In the last week I have made two versions of clean, lean banana pancakes, one from the ever-inspiring Kate at Finger, Fork & Knife and another which my friend told me about, which is so easy it is almost ridiculous.
These pancakes taste great with raw honey, bee pollen, natural yogurt (or coyo, I am sure that would taste great too) or organic maple syrup. I think cinnamon would be a great addition to, and would compliment the banana and honey flavours perfectly. They are delicious, protein rich, gluten free, dairy free, sugar free and vegetarian. Plus, we all know breakfast is the most important meal of the day, so why not enjoy something as fabulous as pancakes?!
Simple Clean Banana Pancakes
Ingredients (1 large serve):
- 1 banana
- 2 eggs
- 1/2 cup quinoa flakes/gluten free oats
- Coconut oil (for cooking)
- Raw honey or natural maple syrup
Method: 1. Place all ingredients in blender and blend together until batter is created. 2. Heat a pan and melt coconut oil in it. Pour batter into medium-heat pan and cook until cooked through. 3. Drizzle honey or maple syrup over pancakes and enjoy!
I love the simplicity of this recipe and how delicious it tastes, especially with plenty of raw honey. What's more, the eggs provide a good dose of protein, Omega 3s and 6s, banana gives it natural sweetness and flavour, plus a bunch of vitamins and minerals, and the quinoa flakes add more protein and essential amino acids and fibre. Pancakes so healthy you can eat them for breakfast and not feel even the slightest bit guilty! And thanks to being protein rich, they keep you full for a good few hours, right up until lunch. So you can tease your friends and peers who eat normal food, telling them you ate delicious and healthy pancakes for breakfast!
