Friday Fab Foodie Friend: Katie Tankard

Friday Fab Foodie Friend is back! Sorry for the absence of this 'segment' on Berry, Berry Happy. I have not run out of inspirational people to interview, but life got in the way. Anyway, I am SUPER excited because today I get to share with you one of my personal friends and health inspirations - Katie Tankard. I first got introduced to Katie early on in my health journey, when I was only 16. Our Mums hooked us up because they thought we would enjoy the company of another like-minded young female, and they weren't wrong. Nowadays Katie and I get to catch up on the odd occasion that I am home for lovely walks and chats about absolutely everything, from love and life to hiking and our favourite recipe of the week. Knowing Katie I can assure you that she truly does 'walk her talk' when it comes to living a balanced and healthy lifestyle. Recently I have been lucky enough to attend a few of her fabulous Barre-inspired fitness classes (as she is in training to become a Barre instructor) and I absolutely love them. I leave each session buzzing with energy and a few sore spots to say the least! She is also the fabulous creator of Thrive Fitness and Wellbeing - check it out. 1. Tell us a bit about yourself and what you are currently doing in life?

I’ve recently finished university (Bachelor of Education), which has been a great weight lift off my shoulders and now I can give 100% of my energy to my business Thrive Fitness & Wellbeing, in which I run personal training sessions, barre, workshops, and health coaching.

2. What are your passions? What do you love to do/talk about?

Teaching others to move their bodies in a loving way that makes them feel alive and strong, so that they can carry this empowering attitude into their day. My best friend, Hannah, who is a Pilates instructor and physio and I are discussing fitness and physical health daily, learning and bouncing off each other.

My largest passion that really gets my heart pumping at even the thought, is hiking, travelling and exploring. Nature is where I feel most at peace and in my own true nature. I have an e-book called The Thrive Travel Guide on my site.

3. What kick-started your interest in health and wellness? Was it a turning point moment or a gradual transition?

Through high school and early years of uni, I took my health for granted trying every diet you could imagine, and punished myself for hours on end in the gym, even lying to my family about where I was. The cycle went from being extremely underweight to slightly overweight. I’d gone from an athlete with so many aspirations, to a binge-drinking party girl. A moment that really shook me was the morning my grandfather has passed and my parents were in France, I spent the whole evening in the gym, doing class after class as though nothing had happened. This was the first hint that I did not know how to manage my emotions.

A few months later I began CrossFit and experienced a back injury from not listening to my gut instinct to stop when I was told to lift a heavier weight. I am now grateful for this experience, because for those two years of hardly being able to walk more than ten minutes, I delved deeply into spirituality and turned inwards. I studied EFT (Emotional Freedom Technique) and became a practitioner for this method which seemed to help my back the most in conjunction with osteopathy.

Meeting my boyfriend was the largest turning point. I met him the day before the EFT course. He has taught me balance, not to take life too seriously, and most importantly how to have pure fun! I put the final stages of my back healing down to Warren, and simply being in love. The high frequency that love emits assisted my back healing fully, and within a few months of meeting him, I was in no pain whatsoever. To me this proved that the healing was halted due to my emotions not being released.

So my transition was gradual. First, the emotional transition had to occur which resulted in a total physical transformation too. Currently, I feel the strongest, happiest and most balanced I have ever felt. It is a beautiful ever evolving feast though, and I am sure I will continue to transform.

 4. In your opinion what is a healthy lifestyle?

A balance in each area of ‘The circle of life’: Healthy relationships, a career you love, home cooking, spirituality, daily movement, creativity, social life, overall health, education, joy/having fun!

Most people think health is just about diet and exercise, when in fact it encompasses many other things that truly nourish us down to our core such as your relationship with the one, the divine or god, or whatever it is for you.

 5. Describe your average day – what do you do, eat, wear, create?

Do: On the days that I don’t have a 6am start, I wake slowly. Meditate and write in my gratitude journal. Body brush, shower, and lather my entire body in sweet almond oil and whichever essential oils I feel like applying that day. I’ll make breakfast and play with my kitten, do some organizing around the house and head off to work. On the early mornings, I get ready within 15 minutes and complete that routine after I finish work at either 8, 9 or 10am. No day is ever the same. I train a few shift workers, so I could be working on a Sunday at 6.00pm and not even know until that morning - I am very flexible because I love it! I also set boundaries if I am fatigued though.

I workout myself either before or after lunch and choose what I feel like doing each day. I often do some baking during the day, errands, reply to emails and clients and start work again around 3 or 4pm until 7 or 8pm.

My night time routine is eat dinner, read or stretch or foam roll, get the essential oil diffuser going and chill out. I rub lavender and clary sage on the bottom of my feet to get a nourishing night’s sleep.

Eat: I believe in the Ayurvedic principle of three set meals a day. I will rarely snack unless I am absolutely starving. Our bodies need 4-6 hours to digest and utilize the energy from the meal we ate before. I also food combine for optimum digestion and never drink with meals.

Breakfast is either an Ayurvedic style drink I blend in the thermomix with ghee, coconut oil, cinnamon, turmeric, great lakes gelatin, tbs of raw organic protein and sometimes a sneaky shot of organic coffee OR coconut flour pancakes OR a green smoothie packed with blueberries, fresh greens, matcha, ghee and MCT oil.

Lunch is either at Clove Organic café, or a quick omelette or veggie scramble, or leftovers from dinner.

Dinner is lots of slow cooked meals that last a few days, fresh fish and veg. Warren does most of the cooking (I probably make dinner once a week!). My favourite two dinners he prepares are paleo chicken schnitzels he crumbs in coconut flour, almond meal and eggs served with a big salad, and he makes an amazing spag bol that I have with zucchini noodles and he has with spelt noodles. Always grass fed and organic meats.

Wear: I live in sports wear! Lululemon or Lorna Jane, and I’m now trying to buy more bamboo clothing to minimize toxic load. It’s nice to have events on the weekend where I can get dressed up and feel feminine. I don’t shop, my mum gets sick of me wearing the same clothes year after year so she does my shopping! Which is fine by me, I simply couldn’t care too much what I’m wearing but it bothers her so I let her do her thing. For events I’ll borrow my sister’s clothes.

6. What is your favourite way to move and be active? 

Walking, barre, yoga, resistance training and the ultimate way to move is hiking in nature.

7. What do you like to do in your down time or to relax?

Coffee with friends, watch movies, nap (a lot!), play with my kitten, and get stuck into books. My latest favourite is ‘The Light Between Us’ by Laura Lynn Jackson.

8. What is a quote that resonates with you at the moment?

“Life is 10% what you make it and 90% how you take it” is one I heard not long ago, which helps me get perspective on daily happenings.

9. What is your philosophy or approach to life? Do you have a personal motto or mantra?

Ong Namo Guru Dev Namo is a mantra given to me by Laura Plumb when I had an astrology reading with her a few years ago. It has stuck with me. It means to call upon the divine giver of wisdom. So when I feel disconnected I will chant this mantra or repeat it in my mind during meditations. I love singing it out loud to feel the vibrations. Mantras are great to re-connect and assist you to turn inwards. It relates directly to my other favourite philosophy which is ‘The whole universe is inside of you’. There is no need to seek approval or answers from external sources.

10. Top 3 favourite foods?



Cinnamon? If that counts. I put it on everything.

11. What is one health/wellness/spirituality film or book that you would recommend to everyone?

‘Tune In’ by Sonia Croquette. Life changing.

12. What is your advice to someone who would like to make positive health changes in their life?

Start with the inner work, it is the hardest but it is the most rewarding. The outer self falls into place after we have done the inner work. Start by reading, listening to podcasts, surrounding yourself by people who have vitality and absorbing as much information as you can. Knowledge is power. Once you know something, you can’t un-know it!

13. What is the best thing that has happened today?

My two best friends Matt and Jace got home today and invited us over for dinner.

14. Other than a healthy lifestyle, what do you think are three keys to health and happiness?

Understanding one’s emotions and tuning in daily.

Making decisions from love, not fear. Heart not head.

Daily gratitude and replacing negative thoughts with positive ones.

 15. Anything else you would like to add? A recipe you would like to share?

Yes! I am a complete oil addict at the moment and love adding them to my cooking.

Chocolate Peppermint Truffles

3/4 cup organic coconut milk

300 g organic dark chocolate (such as Loving Earth)

3 drops of dōTERRA Peppermint essential oil

450 g cacao powder

10 drops liquid stevia OR 2tbs coconut sugar

Hot water

2 tbs coconut oil

Shredded coconut, to garnish


  1. Place the chocolate (chopped) in medium heat-safe bowl and set aside. Place the coconut milk in a small saucepan over medium heat.
  2. Heat coconut milk until it is almost boiling.
  3. Pour the hot coconut milk over the chopped chocolate and allow to sit for one minute to soften the chocolate, then gently whisk together until the chocolate is melted and smooth. Add peppermint oil and stir.
  4. Place this mix in the fridge for 40minutes. Don’t wait too long or it won’t be able to roll.
  5. Remove from fridge and use a spoon to form small balls and roll them between your hands to get them round.
  6. Melt coconut oil and add cacao powder and hot water until it is a smooth and fluid liquid. Add your desired level of sweetness. Don’t overheat or it will be lumpy.
  7. Dip a truffle using a fork until it is completely submerged in the melted coating.
  8. Place the truffle on a foil-covered baking sheet, and while it is still wet, sprinkle the top with toasted or untoasted coconut.
  9. Repeat and place tray in the refrigerator to set for 15 minutes.
  10. Enjoy and devour!
